Spinach Ricotta Pie

Ingredients:
One frozen pie crust
One small onion
1 package 10 oz frozen chopped spinach
Oregano or Basil
Salt and Pepper
1 lb. Ricotta cheese
3 eggs
3 T flour
Grated Cheese
nutmeg
1 cup Sour Cream
Paparika

Saute 1 small onion diced in some butter and then add 1/2 pound spinach (I get 10oz frozen chopped spinach and let it defrost). Wait until all the water from the spinach evaporates. It's good to put in some salt and pepper and basil or oregano if you have some herbs.

Make the cheesey stuff:

1 lb ricotta (I get part-skim)
3 beaten eggs
3 Tbs (tablespoon) flour
1/2 cup grated cheese (cheddar or Mozarella)
dash nutmeg

Once this is mixed together add the spinach stuff.

Poor into pie crust and spread around.

Top with 1 cup sour cream (I get lowfat) and then some paparika.

375 degrees for 40 - 45 minutes
