Peel and chop. ~ 1cup of apple juice/cider or just water Granulated sugar to taste. I'd start with about a cup to draw out the liquid, then add more near the end as needed. Cinnamon, Nutmeg, Cloves, and Ginger to taste. (I usually just sprinkle about a thumbnail size area of the cloves nutmeg and ginger, and liberally with the cinnamon) Cook on low, or high doesn't matter really except high is a bit faster. ... go watch a movie or 3... It smells good now... give it a stir... go watch a few more movies... Time for another stir then bed. Wake up to that delicious smell. Stir again. Keep cooking until it's developed a dark caramel color. When it's a light caramel is probably when you'd want to add any more sugar so it can cook in right. On low it takes somewhere around 30 hours for me, on high about 18-20, but that depends on your cooker. The apples will have mostly cooked down, but if you want the apple butter smooth then puree with an immersion blender. Pour into jars and either water bath can, or freeze once cool. When you want that deliciousness I suggest spreading it on toast. |
