Carrot Cake
Recipe from Barbara (Borbola) Szimnaller, Mimi’s maternal grandmother

Cake
4 eggs
2 cups sugar
1 1/2 cup vegetable oil

2 cups flour
2 tsp cinnamon
2 tsp baking soda
2 tsp baking powder
1 tsp salt

3 c grated carrots
1 cup chopped nuts (optional)

Icing
8 oz cream cheese
1 stick butter
1 box confectioner’s sugar (1 lb.)
1 tsp vanilla

Cake: Beat eggs. Add sugar and oil. Stir in dry ingredients then carrots and nuts. Bake at 350 degrees for about 45 mins.

Icing: Combine cream cheese, butter, confectioner’s sugar, and vanilla. Add milk or cream if needed.
